Warm-up with this easy, family-favourite, gluten-free casserole. Make it ahead of time for a delicious work or school lunch, or just for a simple mid-week meal. This classic recipe has been refreshed and updated time after time, our variation has a gluten-free pasta twist. Perfect for every member of the family to enjoy!

Toppings for the recipe are perfectly customisable. Before baking, cover your gluten-free casserole with more cheese or breadcrumbs for a traditional topping or finish with your favourite gluten-free potato chips. Not necessarily a healthy choice, but a delicious one nonetheless!

Choose your seasoning according to your tastes as well. Other than salt & pepper, onion and garlic powders are an easy, delicious addition. Sprinkle a little paprika for a delicious depth of flavour or add some spice with chilli flakes.

Ingredients:

  • 400g gluten-free pasta shapes of your choice (not noodles)
  • 40g butter
  • 40g GF flour
  • 400ml milk (full cream is recommended)
  • 150g strong grated cheddar (make sure it’s gluten-free)
  • 1 drained can of tuna (160g)
  • 330g drained can of corn

Optional:

  • Seasoning of choice (E.g., salt & pepper, garlic powder, onion powder, paprika, chilli flakes)
  • Toppings of choice (E.g., cheese, breadcrumbs, or gluten-free potato chips)

Method:

  1. Preheat your oven to 180°C conventional or 160°C fan-forced.
  2. Boil water in a large saucepan. Once bubbling, add the pasta. Cook to your personal preference.
  3. In a smaller saucepan, make the sauce by combining melted butter and gradually stirring in the GF flour over low heat.
  4. Cook for 1 minute, then slowly stir in the milk until fully combined, creating a thick sauce. Remove from the stove and stir in the cheese.
  5. In the same saucepan (containing your sauce), combine the pasta, tuna, and corn. Season to taste.
  6. Transfer to a baking dish and add your preferred toppings. Bake for about 30 minutes or until the cheese on top is golden brown and bubbling slightly.
