Cauliflower Fried Rice (Gluten-Free)
With gluten-free soy sauce, of course!

Ingredients
- 1 head of cauliflower roughly chopped and blitzed in the food processor until it resembles rice
- 2 eggs, whisked
- 2 cloves garlic, finely chopped
- 2-3cm piece of ginger, finely chopped or grated
- 1 long red chilli, finely sliced
- 4 rashers of bacon, chopped
- 1 brown onion, diced
- 4 Shitake mushrooms (or any type really) chopped
- Handful of beanshoots
- 1-2 Tablespoons olive oil stir frying
- White pepper to taste
- 3-4 Tablespoons of gluten free soy sauce
Chopped veggies of your choice such as:
- Capsicum
- Snow peas
- Asparagus
- Spring onion
- Carrots (shredded)
Method
- Fry eggs into an omelette then slice and set aside
- Fry Bacon until cooked to your liking
- Add olive oil if needed, then the onion, mushrooms, garlic, ginger and chilli and cook a few minutes until the onion is translucent
- Add remaining veggies except cauliflower and stir fry a few minutes until they begin to soften
- Return cooked egg to the pan and mix through
- Add the cauliflower and stir fry until all the veggies are cooked (don’t over cook – a bit of texture is better!)
- Season with white pepper and gluten-free soy sauce
- Enjoy!
