This incredible, better-for-you choc papaya mousse hits all my favourite health pillars: nutrient-dense, gluten free, and super easy to make! The addition of papaya is not only great for your gut but gut-loving too! Make a big batch and have it on hand for any time of the day.

Choc Papaya Mousse
Serves: To share, or just for 1 (we won’t judge!)
Ingredients:
- 1 very sweet ripe papaya
- 1 ripe avocado
- 1/2 cup maple syrup, plus extra to taste
- 1 cup raw cacao powder
- 240ml tin coconut milk
- 1 teaspoon vanilla extract
- 1 pinch sea salt
- 1/4 cup tablespoons walnuts or pecans, roughly chopped
- 1/4 cup raw cacao nibs
- 1/4 cup shredded toasted coconut
- Optional: mixed berries, to top
Method:
- In a powerful food processor, combine the papaya, avocado, maple syrup, and raw cacao powder. Blitz until smooth and fluffy.
- Slowly pour in some of the tinned coconut cream until you’re happy with the consistency.
- Divide the mousse into bowls and top each with roughly chopped nuts, cacao nibs, and shredded coconut.
