Supermarkets are stocking gluten free apple and cinnamon hot cross buns right now, and they’re already halfway to something really good. This gluten free hot cross bun recipe takes them the rest of the way – cinnamon scroll style.
Split a gluten free hot cross bun open, fill it with a cinnamon cream cheese centre, and finish it with a simple glaze. Warm, a little indulgent, and bakery-worthy in 10 minutes.
Gluten Free Cinnamon Scroll Hot Cross Buns
Serves: 4
Time: 10 minutes
Ingredients
- 4 gluten free apple and cinnamon hot cross buns
Cinnamon cream cheese filling
- 200g light cream cheese
- 2 tbsp butter softened
- 3 tbsp brown sugar
- 1½ tsp cinnamon
- 1 tsp vanilla extract
- Pinch salt
Icing glaze
- 1/2 cup icing sugar
- 1-2 tbsp milk of your choice
Method
- Slice buns horizontally and warm in a toaster until just golden on the edges.
- Make the cinnamon cream cheese centre. Using an electric whisk, on a slow speed beat the cream cheese, butter, brown sugar, cinnamon, vanilla and salt until smooth and fluffy. It should be thick but spreadable. Set aside.
- Make the glaze. In a small bowl, mix icing sugar with milk until smooth and slightly thick but pourable.
- Spoon the filling into the centre of each bun. Add the other half on the bun and drizzle glaze over the top. Let it run down the sides slightly.
- Serve warm so the centre is soft and creamy.
